San Choy Bau Lettuce Wraps
Fresh and savoury treat perfect for autumn
As the cool of autumn starts to feel its way in, there’s nothing quite as comforting as a light yet satisfying meal such as San Choy Bau lettuce wraps, according to Chef Matt Conquest.

Ingredients
For the mince filling
1 tbsp vegetable oil
1 onion, finely chopped
2 garlic cloves, minced
250g chicken mince
1 carrot, finely diced or grated
1 red capsicum, finely diced
1/4 cup water chestnuts, finely chopped
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sesame oil
Salt and pepper to taste
1 long red chilli, sliced (optional)
2 spring onions, thinly sliced (for garnish)
2 tbsp chopped peanuts or cashews (optional, for garnish)
Makes 8 lettuce cups
For serving
Large lettuce leaves (baby cos, iceberg or baby gem)
Sriracha or chilli sauce (optional, for added heat)

Method
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chopped onion and garlic, and sauté until softened and fragrant for about 2 minutes.
- Add the chicken mince to the pan, breaking it up with a spoon, and cook until browned and cooked through (about 5 minutes).
- Stir in the diced carrot, capsicum, and water chestnuts, and cook for another 3 to 4 minutes, until the vegetables are tender.
- Mix the soy sauce, oyster sauce, hoisin sauce, and sesame oil in a bowl. Pour the sauce over the chicken and vegetable mixture in the pan. Cook the mince for 2 minutes. Season to taste.
- Remove the pan from the heat, and spoon the filling into the lettuce leaves, dividing it evenly among them.
- Garnish the filled lettuce wraps with sliced green onions and chopped peanuts or cashews, if desired.
- Serve the San Choy Bau lettuce wraps immediately, with sriracha or chilli sauce on the side for those who enjoy an extra kick of heat. Accompany with lime wedges for squeezing over the wraps just before eating.
