World Rivers Day, which is held to highlight the importance of rivers, the benefits they provide and the threats they face, will be celebrated on 29 September. What better time is there to explore the Logan River so close to Amber by Living Gems!
The Logan River is steeped in history and is a rich resource and place of spiritual significance for traditional custodians including peoples of the Yuggera and Yugambeh language groups. In early European settlement days, the river was also important to the area’s establishment and growth.
Today, the Logan River draws people of all ages who enjoy walks, water activities, and learning more about its history.

As the winter chill sets in, there’s nothing quite like cosying up with your loved ones over a comforting, hearty meal.Chef Matt Conquest says his One Pot Baked Beef and Barbecue Beans recipe is the perfect solution. The dish is not only simple to whip up but packs a healthy punch, delivering a satisfying kick of spices to tantalise your taste buds. Best of all, using just one pot saves on the washing up too!
Ingredients
400 g beef mince
1 medium onion, diced
1 green capsicum, diced
1 tsp herb and garlic seasoning
4 slices bacon, chopped and pan cooked until crisp
1 can beans, Matt recommends a Mexican three-bean mix
½ cup barbecue sauce
1 tbsp Mexican spice or USA-style spice mix(serves 2)
MethodPreheat oven to 180 degrees C.

On behalf of Living Gems, we’d like to thank all volunteers who so selflessly donate their time to help events run smoothly.Ahead of National Volunteer Week, which runs between May 20-26, we spoke to a few volunteers at Sapphire by Living Gems where resident photographer Allan Kajewski said there was always a strong contingent of generous homeowners ready to lend a hand.“Residents of Sapphire are fun-loving people, and we have so many volunteers doing jobs from setting up for functions to organising events. We have two hard-working committees – our homeowners and social committees. Flex your mussels for a delicious treat
Black lip mussels are an often-overlooked seafood option for lunch or dinner, but they are a delicious and relatively cost-efficient ingredient.Chef Matt Conquest said his black lip mussel recipe includes a base sauce and if you want to change it up you can add extra ingredients. Home chefs can create a creamy option by adding a teaspoon of fennel seeds and one cup of cream to the sauce.
Ingredients
Serves 2-43 tbsp extra-virgin olive oil
4 golden shallots, peeled and sliced
4 large garlic cloves, minced
1 long red chilli, diced or chopped (optional)
2 cups dry white wine
4 sprigs fresh thyme
2 bay leaves
Sea salt (Matt says not to season with salt until you try the sauce later during cooking.)
Good amount of cracked black pepper
2kg or 2 packs of live mussels, scrubbed and debearded
4 tbsp butter
